What lamb on the spit actually means
Lamb on the spit is a whole carcass mounted on a rotating spit and cooked slowly in its own turning motion, basted as it goes, then carved straight off the frame in front of your guests. That last part is the difference between a spit braai and an oven roast delivered in trays: the meat is not portioned in a kitchen hours earlier, it is cut when the queue reaches it. The rotation is what does the work — fat renders down through the meat instead of running off it, which is why spit lamb stays moist across a long service window.
Gas or traditional coals
Taurus runs a stainless gas spit, which brings a whole lamb up in roughly two hours against the seven to eight hours a traditional coal pit needs. The practical consequence is scheduling: a gas cook can start late morning for an afternoon function, where coals mean an early start and someone minding the fire all day. Gas also means no smoke drifting across a marquee and no ash to clear afterwards, which matters at venues that will not allow an open fire. How many guests a lamb covers
One whole lamb is the unit the packages are built on, and it is why the minimum is 40 guests — below that you are paying for a whole animal to feed a half-full room. Above it, headcount is handled by adding a second spit or a second protein rather than stretching one carcass thinner. What arrives with the lamb
