Why a whole lamb is the default centrepiece
A whole lamb spit braai is what most Cape Town functions book, and not only for the taste of it — a lamb turning on a spit is the thing guests stand around and photograph. It is a centrepiece and a cooking method at the same time, which is why it reads differently from a buffet of the same food. The whole carcass also carves into a genuine mix of cuts, so guests who want a lean slice and guests who want crisp fat are both served from the same animal.

The minimum of 40 guests is not an arbitrary booking threshold — it is the point at which one whole lamb makes sense. Timing on the day
Gas brings a whole lamb up in about two hours, against seven to eight over traditional coals. We set up, run the cook and carve when your guests are ready rather than at a fixed clock time, because eating time is the thing that actually has to be met. That is also why access matters: the spit has to reach its position, so loading distance, gate width and steps all feed into the arrival time. What to confirm when you book
