Wedding spit braai

Corporate spit braai and client days

Corporate functions are the ones with a hard finish time, so the cook is planned against the end of the slot rather than the start. Gas matters more here than anywhere else: there is no smoke drifting into an office park and no ash to clear before the venue is handed back. Dietary lists and headcounts usually arrive from an organiser rather than the host, so send them with the quote request and they get priced in rather than handled on the day. Year-end functions

December is a diary problem before it is a catering problem. Saturday slots in the first three weeks of December go first, and once they are gone no amount of budget brings them back. Christmas spit braai

Christmas functions compete for the same slots as year-ends, in the same fortnight, and they add heat. A Cape Town December lunch needs shade over the serving line more than it needs anything else on the menu — salads and carved meat both suffer standing in direct sun. Birthday spit braai

Birthdays bring the widest spread of ages, which changes the food more than the logistics: the jumbo chicken option is usually the one that covers children and fussier eaters, and it is often added alongside lamb rather than instead of it. Private parties at home

At a house the limits are power, space and neighbours. Gas answers the third one — no smoke over the fence and no all-day fire — and the two-hour cook means the spit is not occupying your garden from dawn.
